Responsibilities:
- Create and execute menus that feature high-quality meat, poultry, and fish dishes that meet customer needs and preferences, as well as seasonal and local availability of ingredients
- Lead and manage a team of kitchen staff, including hiring, training, and scheduling
- Oversee the preparation and cooking of meat, poultry, and fish dishes, ensuring consistency and quality
- Monitor food costs and inventory levels, and implement cost-saving measures as needed
- Ensure compliance with food safety and sanitation regulations, including proper storage, handling, and labeling of meat, poultry, and fish
- Develop and maintain relationships with local suppliers and vendors for meat, poultry, and fish products
- Work closely with other departments, such as front-of-house staff and management, to ensure seamless operations and excellent customer service
- Continuously develop and refine culinary techniques and recipes to enhance the dining experience for customers
- Manage kitchen equipment and facilities related to meat, poultry, and fish preparation, including maintenance and repair
- Manage budgets and financial performance of the meat, poultry, and fish department
Requirements:
- Culinary degree or equivalent experience required, with a specialization in meat, poultry, and/or fish preparation preferred
- At least 5-7 years of experience in a high-volume culinary environment, with at least 2 years in a leadership role focused on meat, poultry, and/or fish preparation
- Strong knowledge of culinary techniques and principles, with expertise in meat, poultry, and/or fish preparation
- Experience managing food costs, inventory, and budgets related to meat, poultry, and fish
- Excellent communication and interpersonal skills, with the ability to lead and motivate a team
- Strong problem-solving skills and ability to make decisions quickly
- Ability to work in a fast-paced environment and manage multiple priorities effectively
- Flexibility to work different shifts as needed, including evenings, weekends, and holidays
- Proficiency in Microsoft Office and kitchen management software
- ServSafe or similar food safety certification
