We are seeking a talented and experienced Meat, Poultry, and Fish Chef to join our culinary team. The successful candidate will be responsible for creating and executing high-quality meat, poultry, and fish dishes, managing food costs and inventory, and ensuring excellent food quality and customer service.

Responsibilities:

  1. Create and execute menus that feature high-quality meat, poultry, and fish dishes that meet customer needs and preferences, as well as seasonal and local availability of ingredients
  2. Lead and manage a team of kitchen staff, including hiring, training, and scheduling
  3. Oversee the preparation and cooking of meat, poultry, and fish dishes, ensuring consistency and quality
  4. Monitor food costs and inventory levels, and implement cost-saving measures as needed
  5. Ensure compliance with food safety and sanitation regulations, including proper storage, handling, and labeling of meat, poultry, and fish
  6. Develop and maintain relationships with local suppliers and vendors for meat, poultry, and fish products
  7. Work closely with other departments, such as front-of-house staff and management, to ensure seamless operations and excellent customer service
  8. Continuously develop and refine culinary techniques and recipes to enhance the dining experience for customers
  9. Manage kitchen equipment and facilities related to meat, poultry, and fish preparation, including maintenance and repair
  10. Manage budgets and financial performance of the meat, poultry, and fish department

Requirements:

  1. Culinary degree or equivalent experience required, with a specialization in meat, poultry, and/or fish preparation preferred
  2. At least 5-7 years of experience in a high-volume culinary environment, with at least 2 years in a leadership role focused on meat, poultry, and/or fish preparation
  3. Strong knowledge of culinary techniques and principles, with expertise in meat, poultry, and/or fish preparation
  4. Experience managing food costs, inventory, and budgets related to meat, poultry, and fish
  5. Excellent communication and interpersonal skills, with the ability to lead and motivate a team
  6. Strong problem-solving skills and ability to make decisions quickly
  7. Ability to work in a fast-paced environment and manage multiple priorities effectively
  8. Flexibility to work different shifts as needed, including evenings, weekends, and holidays
  9. Proficiency in Microsoft Office and kitchen management software
  10. ServSafe or similar food safety certification
